Makes approx 10 balls
6 fresh Dates (not dried)
1/3 cup Pecans
2 teaspoons Almond Meal
1/3 tsp Vanilla Extract
2 tsp Chia Seeds
1/3 teaspoon ground Coffee
1/4 cup desiccated Coconut, for coating
Remove pits from dates, then place them along with the pecans, almond meal and vanilla extract in a small blender.
Process until the nuts are very finely chopped and the mixture starts to clump together.
Add chia seeds and ground coffee and pulse a few more times until everything is well mixed
With moist hands, roll rounded teaspoon sized portions of the mixture into balls. Roll each ball in the coconut, lightly coating them.
These balls can be stored in a plastic sealed container (if they last that long!)
